Ingredients:
4 large Banana peppers
1 tbsp Olive oil
1 lb Ground Italian sausage
2 cloves Garlic, minced
2 small Tomatoes, seeded and diced
1 tbsp Fresh parsley, chopped
1/2 tsp Sea salt
1/2 tsp Black pepper
4 oz Cream cheese
1/4 cup Grated parmesan cheese
3/4 cup Mozzarella cheese, shredded
Instructions:
Preheat your oven to 375°F (191°C) and line a baking sheet with parchment
paper.
Cut each banana pepper in half lengthwise, remove the seeds and white
flesh, and arrange them on the baking sheet, open side up.
Heat olive oil in a large skillet over medium-high heat. Add the ground Italian
sausage and cook for 8-10 minutes, breaking it apart with a spatula, until
browned.
Reduce the heat to medium, add minced garlic, and cook for 1 minute until
fragrant.
Stir in the diced tomatoes and fresh parsley, cooking for about 5 minutes
until the tomato juice has evaporated.
Mix in the cream cheese and parmesan cheese until well combined. Season
with salt and pepper.
Fill the banana peppers with the sausage mixture and top each with
shredded mozzarella cheese.
Bake for 18-20 minutes, until the peppers are soft and the cheese is melted
and golden.
