Ingredients
- 2 cups (480g) 4% small curd cottage cheese
- ½ avocado
- ⅓ cup fresh herbs (such as chives, flat-leaf parsley, and dill), plus extra for garnish
- 1½ tablespoons fresh lemon juice
- 1½ tablespoons extra virgin olive oil, plus extra for garnish
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- ¼ teaspoon garlic powder
Instructions
- In a food processor, combine the cottage cheese, avocado, fresh herbs, lemon juice, and olive oil.
- Blend until the mixture is whipped and creamy, approximately 60 to 90 seconds.
- Remove the blade and stir in the salt, black pepper, and garlic powder until well combined.
- Transfer the dip to a serving bowl.
- Garnish with a drizzle of olive oil and chopped fresh herbs.
- Serve with an assortment of fresh-cut vegetables and crackers.
