Ingredients:
2 cups rolled oats
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
2 large apples, peeled and chopped
2 large eggs
1/4 cup honey or maple syrup
1 cup milk (dairy or non-dairy)
1 teaspoon vanilla extract
1/4 cup melted coconut oil or vegetable oil
1/4 cup chopped walnuts or pecans (optional)
Directions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper.
Combine Dry Ingredients:
In a large bowl, mix together the rolled oats, baking powder, ground cinnamon, ground nutmeg, and salt.
Add Apples:
Add the peeled and chopped apples to the dry mixture and toss to coat.
