Ingredients:
1 loaf of artisan bread, sliced
2 tablespoons olive oil
2 cloves garlic, minced
1 pound mushrooms, thinly sliced
1/4 cup white wine
1 tablespoon fresh thyme leaves
Salt and pepper to taste
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Directions:
Preheat your oven to 400°F (200°C). Arrange the bread slices on a baking sheet and lightly brush each
with olive oil. Bake for 8-10 minutes, or until golden and crispy.
While the bread is toasting, heat the remaining olive oil in a large skillet over medium heat. Add the
garlic and mushrooms, sautéing until the mushrooms are golden and have released their moisture,
about 5-7 minutes.
Deglaze the pan with white wine, scraping up any browned bits from the bottom of the skillet. Stir in the
thyme, salt, and pepper, cooking for an additional 2 minutes.
Top each toasted bread slice with a generous amount of the mushroom mixture. Sprinkle with grated
Parmesan and broil for 2-3 minutes, or until the cheese is melted and bubbly.
Garnish with chopped parsley before serving.
