4 large apples, peeled and diced
1/2 cup sugar
1 teaspoon cinnamon
1 tablespoon lemon juice
2 cups all-purpose flour
1/4 cup sugar
1/2 teaspoon salt
2/3 cup shortening
4-6 tablespoons cold water
Vegetable oil for frying
Powdered sugar for dusting
Directions
In a saucepan, combine the diced apples, 1/2 cup of sugar, cinnamon, and lemon juice. Cook over medium heat until the apples are soft, which usually takes about 10 minutes. Set the mixture aside to cool.
In a mixing bowl, combine the flour, 1/4 cup of sugar, and salt. Cut in the shortening until the mixture resembles coarse crumbs.
Gradually add water, stirring until a dough forms.
Roll out the dough on a floured surface until it is about 1/8 inch thick. Cut it into 5-inch squares.
Place a spoonful of the apple mixture onto each square. Fold the dough over the filling and seal the edges.
Heat oil in a deep fryer or large skillet to 375°F (190°C). Fry the pies until they turn a delectable golden brown, which takes around 3-4
minutes on each side. Once ready, drain them on paper towels and dust them lightly with powdered sugar.
