Cranberry Apple Pecan Chicken Salad

Ingredients:

3/4 cup mayonnaise

1/4 cup plain Greek yogurt

1 1/2 teaspoons Dijon mustard

1/4 teaspoon onion powder

1/4 teaspoon kosher salt

1/4 teaspoon pepper

4 cups cooked, chopped chicken breast (about 2 pounds, homemade seasoned and baked, or rotisserie)

3/4 cup small diced Granny Smith apple

1/3 cup dried cranberries

1/4 cup chopped pecans

Directions:

In a large bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, onion powder, salt, and

pepper. Taste and adjust the seasoning if necessary.

Ensure the chicken is completely cooled, then chop it up and add it to the bowl.

Gently fold in the diced apple, dried cranberries, and chopped pecans.

Serve as is or on dinner rolls, sliced croissants, or atop a bed of sliced tomatoes and lettuce.
