Ingredients:
1 scoop (28g) vanilla protein powder
¼ teaspoon ground cinnamon
¼ teaspoon baking powder
¼ cup unsweetened vanilla almond milk
1 egg white (approximately 46g)
2 tablespoons unsweetened applesauce (or pumpkin puree)
½ teaspoon vanilla extract
Cinnamon Glaze:
1 teaspoon ground cinnamon
1 teaspoon coconut butter, melted
5-6 drops vanilla liquid stevia (or sweetener of choice)
Directions:
In a small bowl, mix together the protein powder, cinnamon, and baking powder.
Add the almond milk, egg white, applesauce, and vanilla extract to the dry ingredients; stir until smooth.
Transfer the batter to a large, greased (using coconut oil or non-stick spray) microwave-safe coffee mug.
Microwave on high for approximately 3 minutes (microwave times may vary; mine took 3 minutes and 15 seconds).
While the cake is cooking, prepare the glaze by mixing together the cinnamon, melted coconut butter, and stevia in a small bowl.
Once the cake is done, carefully tip it out onto a plate. Pour the glaze over the top.
