Chocolate Crinkle Cookies

Ingredients:

1 cup unsweetened cocoa powder

2 cups white sugar

1/2 cup vegetable oil

4 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1 cup confectioners’ sugar, for rolling

Instructions:

In a large bowl, mix together cocoa powder, white sugar, and vegetable oil.

Beat in eggs one at a time, then stir in the vanilla.

In a separate bowl, combine flour, baking powder, and salt. Gradually add the dry ingredients to the cocoa mixture and mix well.

Cover the dough and chill for at least 4 hours or overnight.

Preheat the oven to 350 degrees F (175 degrees C) and line baking sheets with parchment paper.

Shape dough into 1-inch balls and roll them in confectioners’ sugar to coat.

Place cookies 2 inches apart on prepared baking sheets.

Bake in the preheated oven for 10 to 12 minutes or until the tops are crackled.

Allow cookies to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
