Ingredients:
For Cajun Seasoning:
1 teaspoon smoked paprika
½ teaspoon chili powder
½ teaspoon cumin
1 teaspoon Italian seasoning
½ teaspoon garlic powder
¼ teaspoon Cayenne pepper
¼ teaspoon salt
For the Chicken:
1.5 lb chicken thighs, boneless, skinless
Salt and freshly ground black pepper to taste
2 tablespoons olive oil
For Garlic Butter Lemon Sauce:
4 cloves garlic, minced
3 tablespoons white wine
3 tablespoons freshly squeezed lemon juice
3 tablespoons butter
2 tablespoons fresh parsley, chopped
Directions:
Cajun Seasoning: Mix smoked paprika, chili powder, cumin, Italian seasoning, garlic powder, Cayenne
pepper, and salt in a small bowl. Alternatively, use 1 tablespoon of your favorite Cajun seasoning.
Sear the Chicken: Season chicken thighs generously with Cajun seasoning on both sides. Heat a large,
high-sided, heavy-bottomed skillet over medium heat for 3 minutes. Add olive oil and chicken thighs.
Cook without moving for 5 minutes to sear. Flip and cook on low-medium heat for 5 more minutes or
until a meat thermometer registers 165°F. Remove chicken from skillet.
Garlic Butter Lemon Sauce: In the same skillet, add minced garlic, white wine, and lemon juice. Cook until
garlic softens. Fold in butter on low heat. Return chicken to skillet and spoon sauce over it. Season with
salt and black pepper. Garnish with parsley.
