Blueberry Cheesecake Protein Balls

Enjoy these soft and fudgy blueberry cheesecake protein balls—a perfect low-carb snack that combines the tangy sweetness of blueberries with creamy cheesecake flavor. With just five ingredients, they’re quick to prepare and ideal for a nutritious treat.

Ingredients:

½ cup vanilla protein powder

½ cup coconut flour

3 tablespoons granulated sweetener of choice (e.g., monk fruit sweetener)

4 tablespoons cream cheese (dairy or dairy-free)

¼ cup blueberry puree (see note)

Directions:

In a bowl, combine the protein powder, coconut flour, and sweetener.

Add the cream cheese and blueberry puree to the dry ingredients.

Using your hands, knead the mixture until a dough forms. If the dough is too soft, add more coconut flour; if too thick, add a teaspoon of water or sweetener to adjust the consistency.

Roll the dough into tablespoon-sized balls.

Enjoy immediately or refrigerate for 10-15 minutes to firm up. Store leftovers in an airtight container in the refrigerator.

Note: To make the blueberry puree, mash fresh blueberries with a fork or blend them in a small blender. For a vibrant color, add a splash of lemon juice to the blueberries when mashing or pureeing; the acidity helps maintain the bright hue.
