- 1 tbsp butter
- 1 lb chicken breasts (cut into bite-size pieces)
- ½ tsp each of:
- Italian seasoning
- Smoked paprika
- Red pepper flakes
- Garlic powder
- Salt
- Pepper
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ cup sun-dried tomatoes (chopped)
- Fresh basil leaves (for garnish)
Instructions
- Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add pasta and cook until al dente (about 8-10 minutes). Reserve ½ cup pasta water before draining.
- Prepare the Chicken and Sauce:
- While the pasta cooks, heat olive oil in a large skillet over medium-high heat.
- Add the onion and sauté for 2-3 minutes until softened.
- Add garlic and butter, cooking for 30 seconds until fragrant.
- Add chicken pieces and seasonings (Italian seasoning, paprika, red pepper flakes, garlic powder, salt, pepper), sautéing for 3-5 minutes until chicken is browned and cooked through.
- Make the Creamy Sauce:
- Stir in heavy cream, reserved pasta water, grated Parmesan, and chopped sun-dried tomatoes.
- Bring to a simmer and cook for 3-4 minutes until the sauce thickens slightly. Taste and adjust seasonings if necessary.
- Combine and Serve:
- Add the cooked pasta to the skillet with the creamy chicken sauce.
- Stir well to coat the pasta evenly.
- Garnish with chopped basil.
- Serve hot.
