Strawberry Cheesecake Cookies

These soft and chewy strawberry cheesecake cookies combine the rich flavors of cream cheese with sweet strawberry pieces for a decadent, dessert-inspired treat.

Ingredients:

1/2 cup unsalted butter, softened

4 oz cream cheese, softened

3/4 cup granulated sugar

1/4 cup light brown sugar, packed

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup freeze-dried strawberries, chopped

1/2 cup white chocolate chips (optional)

Directions:

Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

In a large mixing bowl, cream together the softened butter, cream cheese, granulated sugar, and brown sugar until light and fluffy.

Add the egg and vanilla extract, mixing until well combined.

In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

Fold in the chopped freeze-dried strawberries and white chocolate chips (if using).

Scoop the dough onto the prepared baking sheets, spacing the cookies about 2 inches apart.

Bake for 10-12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
