Ingredients:
– 1 cup dried green or brown lentils
– 4 cups vegetable broth
– 1 onion, diced
– 2 carrots, peeled and chopped
– 2 celery stalks, chopped
– 3 garlic cloves, minced
– 1 can (14 oz) diced tomatoes
– 1 teaspoon ground cumin
– 1 teaspoon paprika
– 1/2 teaspoon turmeric
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
– Lemon wedges (for serving)
Directions:
Rinse the lentils under cold water and drain.
In a large pot, combine the lentils, vegetable broth, onion, carrots, celery, garlic, diced tomatoes, cumin, paprika, turmeric, salt, and pepper.
Bring the soup to a boil, then reduce the heat to low and simmer for about 30-40 minutes, or until the lentils are tender.
Taste and adjust seasoning if needed.
Serve the soup hot, garnished with fresh parsley and a squeeze of lemon.
