Ingredients

  • 1.5 pounds trout fillets (skin-on)
  • 2 tablespoons olive oil
  • 1 tablespoon Italian seasoning (thyme, oregano, parsley blend)
  • ¼ teaspoon salt
  • 4 garlic cloves, diced
  • 3 tablespoons freshly squeezed lemon juice
  • 2 tablespoons white wine (or chicken/vegetable broth)
  • 2 tablespoons butter, softened
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the Trout: Season the flesh side of the trout with Italian seasoning and salt.
  2. Cook the Trout: Heat olive oil in a skillet over medium-high heat. Place trout fillets skin-side up and cook for 4 minutes. Flip and cook for another 2 minutes. Set aside.
  3. Make the Sauce: Using the same skillet, add garlic, lemon juice, and white wine. Cook over medium-low heat for 1 minute. Remove from heat, then stir in butter and parsley until smooth.
  4. Combine: Return trout to the skillet, spoon the sauce over the fillets, garnish with parsley, and serve warm.
