500g (1 lb) ground chicken
2 garlic cloves, minced
1 small shallot or onion, finely chopped
1 tbsp fresh cilantro, chopped
1 tbsp fresh basil or Thai basil, chopped
1 tsp grated ginger
1–2 tsp red curry paste or Thai chili paste (adjust for heat)
1 tbsp fish sauce (or soy sauce)
1 tsp lime zest
1/4 cup panko breadcrumbs (or regular breadcrumbs)
1 egg, beaten
Oil for frying

Mix ingredients:
In a large bowl, combine ground chicken, garlic, shallot, cilantro, basil, ginger, red curry paste, fish sauce, lime zest, breadcrumbs, and beaten egg. Mix well.
Form bites:
Shape the mixture into small bite-sized balls or patties.
Cook:
Heat oil in a skillet over medium heat. Fry chicken bites in batches, turning occasionally, until golden brown and cooked through (about 5–7 minutes).
Drain:
Remove and drain on paper towels.
Serve:
Serve warm with sweet chili sauce, peanut sauce, or a squeeze of lime.
