Ingredients:
1 and 1/2 pounds ground beef (alternative: chicken)
Black pepper, to taste
4 cloves garlic, chopped
1 tablespoon fresh grated ginger (or 1/4 cup candied ginger)
1-3 teaspoons Chinese 5 spice
1/3 cup tamari or soy sauce
1/4 cup Thai chili sauce (see notes for homemade version)
1/4 cup chopped green onions, plus more for garnish
4 Persian cucumbers, chopped
2 cups cilantro, chopped
1/2 cup Thai basil, chopped
1/3 cup chopped roasted peanuts
8 to 10 flour tortillas, warmed
Chili paste and toasted sesame oil, for serving
Directions:
In a large skillet, cook the ground beef seasoned with black pepper over medium heat, breaking it apart
as it browns, about 5 minutes. Add garlic, ginger, and Chinese 5 spice, cooking for an additional minute.
Stir in tamari and Thai chili sauce, simmering until the sauce thickly coats the beef, about 3-5 minutes.
Mix in 2 tablespoons of green onions and remove from heat.
Warm tortillas in the microwave for 15 seconds each. Spoon beef mixture down the center of each
tortilla, topping with cucumber, cilantro, basil, additional green onions, and peanuts. Fold and roll the
tortillas to enclose the filling.
Serve the beef rolls warm with extra soy sauce, chili paste, and a drizzle of toasted sesame oil. Pair with
steamed rice for a complete meal.
