A budget-friendly, kid-approved taco rice bowl that’s super quick to prepare! With seasoned ground beef, rice, and fun toppings, it’s perfect for family dinners or casual get-togethers. Enjoy it over Doritos for a crunchy twist, or serve it as a dip with chips on the side.
Ingredients:
1 lb ground beef
1 packet taco seasoning
2 cups water
2 cups Minute rice (or other instant rice)
Optional toppings:
Crushed Doritos or tortilla chips (for serving)
Nacho cheese sauce
Shredded lettuce
Shredded cheese
Sour cream
Salsa
Sliced olives
Pickled jalapeños
Diced tomatoes
Directions:
In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess grease.
Add the taco seasoning packet, water, and Minute rice to the skillet with the beef, stirring to combine.
Bring the mixture to a boil, then cover the skillet and reduce the heat to the lowest setting. Let it sit covered for 5 minutes or until the rice is tender and has absorbed the liquid.
For serving, place a scoop of taco rice over a bed of crushed Doritos or tortilla chips. Drizzle with nacho cheese and top with your favorite taco toppings, or serve with chips as a dip!
