Ingredients
- 1 large sweet potato, grated
- 2 green onions (whites only), thinly sliced
- 90g (3 oz) halloumi cheese, grated
- 1 egg
- ¼ cup whole-wheat flour (or alternative)
- ½ tsp garlic powder
- ½ tsp cumin
- 2 tbsp olive oil
Instructions
- Prepare Sweet Potato: Squeeze grated sweet potato to remove excess moisture. Place in a mixing bowl.
- Combine Ingredients: Add green onions, grated halloumi, egg, flour, garlic powder, and cumin. Mix thoroughly.
- Cook Rosti: Heat olive oil in a pan over medium heat. Scoop a tablespoon of the mixture, flatten, and fry for 3-4 minutes per side until golden and crispy. Repeat with remaining mixture.
