Description

Sweet Potato Rosti is a healthier, delicious twist on hash browns, blending the natural sweetness of grated sweet potatoes with savory halloumi cheese. Ingredients

  • 1 large sweet potato, grated
  • 2 green onions (whites only), thinly sliced
  • 90g (3 oz) halloumi cheese, grated
  • 1 egg
  • ¼ cup whole-wheat flour (or alternative)
  • ½ tsp garlic powder
  • ½ tsp cumin
  • 2 tbsp olive oil

Instructions

  1. Prepare Sweet Potato: Squeeze grated sweet potato to remove excess moisture. Place in a mixing bowl.
  2. Combine Ingredients: Add green onions, grated halloumi, egg, flour, garlic powder, and cumin. Mix thoroughly.
  3. Cook Rosti: Heat olive oil in a pan over medium heat. Scoop a tablespoon of the mixture, flatten, and fry for 3-4 minutes per side until golden and crispy. Repeat with remaining mixture.
  4. Serve: Enjoy as-is or top with smashed avocado and fried eggs for a complete meal.

Notes

  • For gluten-free rostis, substitute whole-wheat flour with almond or gluten-free flour.
