Sweet and Sour Meatballs

Ingredients:

1 pound ground beef

1 cup dry bread crumbs

1 onion, chopped

1 egg

Salt and pepper to taste

For the Sauce:

1 cup brown sugar

1 cup water

1 cup ketchup

1 tablespoon soy sauce

1 tablespoon cornstarch

1 tablespoon vinegar

1 green bell pepper, chopped

1 red bell pepper, chopped

1 cup pineapple chunks

Directions:

Preheat oven to 350°F (175°C).

In a large bowl, mix ground beef, bread crumbs, chopped onion, egg, salt, and pepper until fully combined. Shape into 1-inch meatballs.

Place meatballs on a baking sheet and bake for 20 minutes, or until browned and cooked through.

Meanwhile, in a large saucepan, whisk together brown sugar, water, ketchup, soy sauce, cornstarch, and vinegar until smooth.

Add the chopped bell peppers and pineapple chunks to the sauce. Bring to a boil over medium heat, stirring constantly until thickened.

Add the baked meatballs to the sauce and gently stir to coat. Simmer for 10 minutes to allow the flavors to meld.
