1/4 cup unsweetened shredded coconut (optional for texture)

Blend the dry ingredients:
In a bowl, combine oats, protein powder, and crushed freeze-dried strawberries. If you’re adding shredded coconut, toss that in as well.
Add the creamy elements:
Mix in the cream cheese, Greek yogurt, honey (or maple syrup), and vanilla extract. Stir everything together until the mixture becomes a thick dough-like texture.
Adjust the texture:
If it’s too dry, add a little extra yogurt or water. If it’s too wet, add a bit more protein powder or oats.
Form the balls:
Roll the mixture into small bite-sized balls, about 1 inch in diameter. You should be able to get around 10-12 balls depending on the size.
Chill:
Place the protein balls on a tray lined with parchment paper and refrigerate for at least 30 minutes to firm up.

Coat the protein balls in crushed graham cracker crumbs for that extra cheesecake vibe.
