Ingredients
- 6 large eggs
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon vinegar
- Salt and pepper to taste
- 1/2 cup spinach (or food coloring if preferred)
- Fresh parsley for garnish
Instructions
- Boil the eggs: Place the eggs in a saucepan and cover with water. Bring to a boil, then reduce the heat and let simmer for 10-12 minutes. Once done, remove from heat, let them cool, and peel the eggs.
- Prepare the filling: Cut the eggs in half lengthwise and remove the yolks. Place the yolks in a bowl. Puree the spinach with a little water in a blender or food processor (skip if using food coloring). Add mayonnaise, Dijon mustard, vinegar, and the spinach puree (or food coloring). Mix until smooth and creamy. Add salt and pepper to taste.
- Fill the eggs: Spoon or pipe the yolk mixture back into the egg whites.
- Garnish: Top with fresh parsley.
- Serve chilled: Enjoy!
Notes
- Variations: Customize by addin mashed avocado, or a pinch of hot sauce for a twist.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 2 days. Best served cold.
