Soft Molasses Cookies

These soft molasses cookies are wonderfully chewy with the perfect balance of warm spices and a deep molasses flavor. Perfect for the holiday season or any time you want a comforting, old-fashioned treat.

Ingredients:

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1/4 teaspoon salt

3/4 cup unsalted butter, softened

1 cup granulated sugar, divided

1 large egg

1/4 cup molasses

1 teaspoon vanilla extract

1/4 cup additional granulated sugar (for rolling cookies)

Directions:

Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt. Set aside.

In a large mixing bowl, beat the softened butter and 1 cup of granulated sugar together until light and fluffy, about 2-3 minutes.

Add the egg, molasses, and vanilla extract to the butter mixture and beat until smooth.

Gradually add the dry ingredients to the wet ingredients, mixing just until the dough comes together.

Scoop tablespoon-sized portions of dough and roll them into balls. Roll each dough ball in the extra granulated sugar, coating it evenly.

Place the sugar-coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart.

Bake for 8-10 minutes, or until the cookies are set around the edges but still soft in the center. The cookies will firm up as they cool.

Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
