2 large eggs

1 tbsp vanilla extract

1 ¾ cups all-purpose flour

1 tsp baking soda

1 ½ tsp ground cinnamon

½ tsp salt

3 cups old-fashioned oats

1 ½ cups raisins

Directions:

Preheat oven:

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix wet ingredients:

In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy. Add eggs one at a time, then stir in the vanilla extract.

Mix dry ingredients:

In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.

Combine wet and dry ingredients:

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the oats and raisins.

Scoop and bake:

Drop the cookie dough by rounded tablespoons onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes or until the edges are golden but the centers are still soft.

Cool and enjoy:

Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
