Ingredients:
8 large flour tortillas
2 cups cooked, shredded chicken
1 can black beans, drained and rinsed
1 cup corn kernels (canned or frozen)
2 cups shredded cheese (cheddar, mozzarella, or a mix)
1 small onion, diced
1 bell pepper, diced
2 tsp taco seasoning
Salt and pepper to taste
Olive oil or non-stick spray
Instructions:
Preheat your oven to 400°F (200°C).
Prepare a baking sheet by spraying it with non-stick spray or brushing it with olive oil.
Lay out 4 tortillas on the baking sheet, overlapping them slightly to create a base that covers the entire sheet. Allow the edges to hang over the sides of the baking sheet.
Mix the shredded chicken with taco seasoning, salt, and pepper.
Sprinkle half of the cheese over the tortillas on the baking sheet.
Distribute the seasoned chicken, black beans, corn, onion, and bell pepper evenly over the cheese.
Top with the remaining cheese.
Cover with the remaining 4 tortillas, tucking the edges of the top tortillas under the bottom tortillas to enclose the filling.
Place a second baking sheet or a piece of foil over the top and press down gently.
Bake in the preheated oven for 20 minutes.
Remove the top baking sheet or foil and bake for another 10 minutes or until the tortillas are crispy and golden.
Let it cool slightly before cutting into squares and serving with your favorite sides like sour cream, guacamole, or salsa.
