Sheet Pan Quesadillas

Ingredients:

🔻 8 large flour tortillas

🔻 2 cups cooked, shredded chicken

🔻 1 can black beans, drained and rinsed

🔻 1 cup corn kernels (canned or frozen)

🔻 2 cups shredded cheese (cheddar, mozzarella, or a mix)

🔻 1 small onion, diced

🔻 1 bell pepper, diced

🔻 2 tsp taco seasoning

🔻 Salt and pepper to taste

🔻 Olive oil or non-stick spray

Instructions:

👆 Preheat your oven to 400°F (200°C).

👆 Prepare a baking sheet by spraying it with non-stick spray or brushing it with olive oil.

👆 Lay out 4 tortillas on the baking sheet, overlapping them slightly to create a base that covers the entire sheet. Allow the edges to hang over the sides of the baking sheet.

👆 Mix the shredded chicken with taco seasoning, salt, and pepper.

👆 Sprinkle half of the cheese over the tortillas on the baking sheet.

👆 Distribute the seasoned chicken, black beans, corn, onion, and bell pepper evenly over the cheese.

👆 Top with the remaining cheese.

👆 Cover with the remaining 4 tortillas, tucking the edges of the top tortillas under the bottom tortillas to enclose the filling.

👆 Place a second baking sheet or a piece of foil over the top and press down gently.

👆 Bake in the preheated oven for 20 minutes.

👆 Remove the top baking sheet or foil and bake for another 10 minutes or until the tortillas are crispy and golden.

👆 Let it cool slightly before cutting into squares and serving with your favorite sides like sour cream, guacamole, or salsa.
