Instructions

  • Prepare the Sugar Syrup:
    • Combine granulated sugar, water, and lemon juice in a large saucepan.
    • Heat over medium, stirring until sugar dissolves.
    • Boil without stirring until the syrup reaches 240°F (115°C). Remove from heat.
  • Prepare the Cornstarch Mixture:
    • In another saucepan, whisk cornstarch, cream of tartar, and water until smooth.
    • Cook over medium heat, stirring until thick and boiling.
  • Combine and Cook:
    • Slowly pour the hot sugar syrup into the thickened cornstarch mixture while stirring.
    • Simmer on low heat for 60–90 minutes, stirring frequently until thickened and golden.
    • Add rosewater, pistachios, and red food coloring.
  • Set the Turkish Delight:
    • Line an 8×8-inch baking dish with plastic wrap and grease lightly.
    • Spread the mixture evenly, cool to room temperature, cover, and refrigerate for 4 hours or overnight.
  • Prepare the Coating:
    • Mix powdered sugar and cornstarch in a bowl.
  • Cut and Coat:
    • Remove Turkish Delight from the dish, peel off plastic wrap, and cut into squares.
    • Roll each square in the powdered sugar mixture to coat all sides.
  • Serve:
    • Arrange on a serving platter. Store leftovers in an airtight container with additional powdered sugar mixture
