Ingredients

  • 1 pound pizza dough
  • 1 Tablespoon butter
  • 8 cloves roasted garlic, minced
  • 2 Tablespoons all-purpose flour
  • 1/2 teaspoon black pepper
  • 1/2 cup skim milk
  • 1/4 cup half and half
  • 1/4 cup Parmesan cheese
  • 1 1/2 cups boneless, skinless chicken breast, cooked and shredded
  • 1/4 cup red onion, diced
  • 3/4 cup Mozzarella cheese
  • 1 teaspoon fresh thyme, chopped
  • 1/2 teaspoon dried oregano
  • 1 Tablespoon fresh parsley, chopped

Instructions

  1. Preheat your oven to 450°F. Prepare a baking sheet with a Silpat liner or lightly grease and sprinkle with cornmeal.
  2. In a small saucepan, melt the butter over medium heat. Add minced roasted garlic and sauté for 1 minute until fragrant.
  3. Stir in flour and cook for 1 minute, ensuring a smooth mixture.
  4. Slowly whisk in skim milk and half and half. Add black pepper and cook, stirring frequently, for about 3 minutes until thickened.
  5. Remove from heat and stir in Parmesan cheese until smooth.
  6. Spread the pizza dough into a 12-inch circle on the prepared baking sheet. Spread the white sauce evenly over the dough.
  7. Top with shredded chicken, diced red onion, and Mozzarella cheese.
  8. Bake for 17 minutes, or until the crust is golden and cheese is bubbly.
  9. Sprinkle with fresh thyme, dried oregano, and parsley. Slice and serve immediately.

Notes

  • To roast garlic at home, wrap cloves in foil with olive oil and bake at 400°F for 30-40 minutes until golden and soft.
