Rice Paper Dumplings

Light and healthy dumplings made with delicate rice paper wrappers filled with a savory mixture of vegetables and protein, perfect as a guilt-free appetizer or snack.

Ingredients:

12 rice paper wrappers
1 cup shredded cabbage
1/2 cup grated carrots
1/2 cup chopped mushrooms
1/2 cup cooked shrimp or ground chicken (optional)
2 cloves garlic, minced
1 tablespoon soy sauce
1 teaspoon sesame oil
1/4 cup chopped green onions
Salt and pepper, to taste
Vegetable oil, for cooking

Dipping sauce of choice (soy sauce, sweet chili, or peanut sauce)

Directions:

In a large bowl, combine cabbage, carrots, mushrooms, garlic, cooked shrimp or chicken (if using), soy sauce, sesame oil, green onions, salt, and pepper. Mix well.
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 5-10 seconds until softened but still pliable. Lay it flat on a clean surface.
Place about 2 tablespoons of the filling near the edge of the wrapper. Fold the sides over the filling, then roll tightly to enclose completely, forming a dumpling.
Heat a non-stick skillet over medium heat and add a small amount of vegetable oil. Place dumplings seam side down and cook for 2-3 minutes until golden and crisp. Flip and cook another 2 minutes on the other side.
Remove from skillet and drain on paper towels. Serve warm with your favorite dipping sauce.
