Ingredients

  • 1 lb (450 g) baby potatoes, washed and halved
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper, to taste

Instructions

  1. Preheat the Oven: Set the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the Potatoes: Toss halved baby potatoes with olive oil, salt, and pepper in a large bowl. Spread evenly on the prepared baking sheet.
  3. Roast the Potatoes: Roast for 25-30 minutes, turning halfway, until golden brown and tender.
  4. Make the Garlic Sauce: Melt butter in a saucepan over medium heat. Add minced garlic and sauté for 1 minute. Pour in heavy cream and simmer. Stir in Parmesan cheese until the sauce is smooth and thickened. Season with salt and pepper.
  5. Combine and Serve: Transfer roasted potatoes to a serving dish, pour the garlic cream sauce over them, and toss gently. Garnish with fresh parsley. Serve warm.
