Pollo Asado

Ingredients:

For the Marinade:

1/2 cup orange juice 🍊

1/4 cup lemon juice 🍋

1/4 cup olive oil 🫒

1/4 cup chopped fresh cilantro 🌿

4 cloves garlic, minced 🧄

1 tablespoon ground cumin

1 tablespoon dried oregano

1 tablespoon smoked paprika

2 teaspoons salt 🧂

1 teaspoon black pepper

For the Chicken:

4 bone-in, skin-on chicken thighs 🍗

4 bone-in, skin-on chicken drumsticks 🍗

Instructions:

Prepare the Marinade:

In a large mixing bowl, whisk together the orange juice, lime juice, lemon juice, olive oil, chopped fresh cilantro, minced garlic, ground cumin, dried oregano, smoked paprika, salt, and black pepper.

Marinate the Chicken:

Place the chicken thighs and drumsticks in a large resealable plastic bag or a baking dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best results.

Preheat the Grill:

Preheat your grill to medium-high heat. If using an oven, preheat to 425°F (220°C).
