Ingredients

For the cookies:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the filling:

  • 1 cup marshmallow fluff
  • 1/2 cup milk chocolate chips, melted
  • 4 graham crackers, crushed

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until smooth and fluffy.
  • Add the egg and vanilla extract, mixing until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  • Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them 2 inches apart. Flatten slightly with a fork to create a crisscross pattern.
  • Bake for 10-12 minutes, or until the edges are golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • Spread a spoonful of marshmallow fluff on the bottom of one cookie. Drizzle melted chocolate over the fluff and sprinkle with crushed graham crackers.
  • Top with a second cookie to create a sandwich. Repeat with the remaining cookies.
  • Let the sandwiches set for 10-15 minutes before serving.
