Ingredients:
2 lbs. Chicken Breast or thighs
12 ounces Peach Preserves or Jam (1 and 1/2 cups)
1/2 cup BBQ Sauce
1/2 tsp Mustard
1/2 tsp Red Chili Flakes (optional)
Salt and Pepper (to taste)
Directions:
Place the chicken in a slow cooker and season with salt and pepper.
In a small bowl, mix together the peach preserves, BBQ sauce, mustard, and red chili flakes.
Pour half of the sauce mixture over the chicken.
Cook on low for 4 hours or until the internal temperature reaches 165°F.
Shred the chicken in the cooker, pour the remaining sauce over it, and stir to coat.
Serve the chicken warm with a side of creamy parmesan mashed potatoes.
