Ingredients:
1 lb boneless, skinless chicken breasts, cubed ????
1 tablespoon olive oil ????
1 packet taco seasoning ????
1 can (10 oz) diced tomatoes with green chilies (Rotel) ????
1 cup long grain white rice ????
2 cups chicken broth ????
1/2 cup jarred queso dip ????
1 cup shredded cheddar cheese ????
1/4 cup sour cream ????
Fresh cilantro, for garnish ????
Directions:
Cook the Chicken:
Heat the olive oil in a large skillet or pot over medium heat. Add the cubed chicken and taco seasoning, cooking until the chicken is browned and cooked through, about 5-7 minutes.
