Oatmeal Lace Cookies

Delicate and crispy oatmeal cookies with a hint of sweetness

Ingredients:

– 1/2 cup unsalted butter
– 1/2 cup brown sugar
– 1/2 cup granulated sugar
– 1 large egg
– 1 teaspoon vanilla extract
– 3/4 cup rolled oats
– 1/4 cup all-purpose flour
– 1/2 teaspoon baking powder
– 1/4 teaspoon salt

Directions:

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a saucepan, melt the butter over low heat. Stir in the brown sugar and granulated sugar until well combined.
Remove from heat and let cool slightly. Stir in the egg and vanilla extract.
In a separate bowl, combine the rolled oats, flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until well incorporated.
Drop teaspoonfuls of the cookie dough onto the prepared baking sheet, spacing them at least 2 inches apart.
Bake for 8-10 minutes, or until the edges are golden brown.
Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
