Ingredients:
1 cup mayonnaise
2/3 cup sour cream
3 tbsp fresh lime juice
2 tbsp taco seasoning
1 bag (16 oz) tri-color coleslaw mix
1 red bell pepper, diced
1 1/2 cups grape tomatoes, halved
1 can (15.25 oz) black beans, drained and rinsed
1 1/2 cups grilled or blackened corn
1 jalapeno, seeded and minced
1/2 cup chopped fresh cilantro
Kosher salt and freshly ground black pepper to taste
Directions:
In a small bowl, whisk together the mayonnaise, sour cream, lime juice, and taco seasoning until smooth.
In a large mixing bowl, combine the coleslaw mix, diced red pepper, halved grape tomatoes, black beans, grilled corn, minced jalapeno, and chopped cilantro.
Pour the mayo mixture over the vegetables and gently stir to coat evenly.
Season with salt and freshly ground black pepper to taste.
