Mashed Potato Beef Boats

Ingredients:

5 medium potatoes, peeled and quartered

1 tablespoon butter

1/4 cup milk

Salt and pepper to taste

1 pound ground beef

1 onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon dried thyme

1/2 cup beef broth

1/2 cup frozen peas and carrots

1 cup shredded cheese (cheddar or your choice)

Directions:

Potato Preparation: In a large pot, cover potatoes with water and boil until tender, about 15-20 minutes.

Drain and return to the pot.

Making Mashed Potatoes: Add butter and milk to the cooked potatoes. Mash until smooth. Season with

salt and pepper. Set aside.

Prepare Beef Filling: In a skillet over medium heat, cook ground beef and onion until beef is browned

and onion is translucent. Add garlic, paprika, and thyme, and cook for another minute.

Simmer: Add beef broth, peas, and carrots. Simmer until vegetables are tender and liquid reduces

slightly, about 5 minutes. Season to taste.

Assemble Boats: Preheat oven to 375°F (190°C). In a baking dish, form mashed potatoes into “boats”

with wells in the center. Spoon beef mixture into wells.

Add Cheese: Top with shredded cheese.

Bake: Bake for 10-15 minutes or until cheese is melted and bubbly.

Serve: Garnish with parsley or chives if desired.
