Ingredients

  • 8 oz dried pasta (any choice, half standard box)
  • 1 tbsp olive oil
  • ½ cup onion (finely chopped)
  • 34 cloves garlic (minced)
  • 1 tbsp butter
  • 1 lb chicken breasts (cut into bite-size pieces)
  • ½ tsp each of:
    • Italian seasoning
    • Smoked paprika
    • Red pepper flakes
    • Garlic powder
    • Salt
    • Pepper
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes (chopped)
  • Fresh basil leaves (for garnish)

Instructions

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Add pasta and cook until al dente (about 8-10 minutes). Reserve ½ cup pasta water before draining.
  2. Prepare the Chicken and Sauce:
    • While the pasta cooks, heat olive oil in a large skillet over medium-high heat.
    • Add the onion and sauté for 2-3 minutes until softened.
    • Add garlic and butter, cooking for 30 seconds until fragrant.
    • Add chicken pieces and seasonings (Italian seasoning, paprika, red pepper flakes, garlic powder, salt, pepper), sautéing for 3-5 minutes until chicken is browned and cooked through.
  3. Make the Creamy Sauce:
    • Stir in heavy cream, reserved pasta water, grated Parmesan, and chopped sun-dried tomatoes.
    • Bring to a simmer and cook for 3-4 minutes until the sauce thickens slightly. Taste and adjust seasonings if necessary.
  4. Combine and Serve:
    • Add the cooked pasta to the skillet with the creamy chicken sauce.
    • Stir well to coat the pasta evenly.
    • Garnish with chopped basil.
    • Serve hot.

Notes

  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days.
  • Reheating: Reheat gently on the stovetop with a splash of cream or broth to loosen the sauce.
  • Freezing: Not recommended due to the potential for the cream sauce to separate upon thawing.
