Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese, divided
  • 1 cup shredded provolone or mozzarella cheese
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  • Preheat Oven: Set oven to 375°F (190°C) and lightly grease a baking dish.
  • Prepare Breading Station: Arrange three shallow dishes:
    • Dish 1: Flour
    • Dish 2: Whisked eggs and milk
    • Dish 3: Panko breadcrumbs, 1/2 cup Parmesan, Italian seasoning, salt, and pepper.
  • Bread Chicken: Coat each chicken breast in flour, dip in egg mixture, then coat with breadcrumb mixture, pressing gently to adhere.
  • Sear Chicken: Heat olive oil in a skillet over medium-high heat. Sear chicken for 3–4 minutes on each side until golden brown.
  • Bake Chicken: Transfer chicken to the baking dish, top with remaining Parmesan and provolone or mozzarella. Bake for 20–25 minutes until internal temperature reaches 165°F (74°C) and cheese is melted.

Notes

  • Variations:
    • Add fresh herbs (e.g., basil, parsley) to breadcrumbs for more flavor.
    • Spice it up with red pepper flakes or cayenne in the breading mix.
    • Swap provolone with Asiago or Romano for a different cheesy profile.
  • Storage:
    • Refrigerate leftovers in an airtight container for up to 3 days.
    • Freeze cooked chicken for up to 2 months. Thaw in the refrigerator before reheating.
  • Reheating Tips: Cover with foil and bake at 350°F (175°C) for 10–15 minutes.
