Instructions:
1. Make the lemon curd:
In a heatproof bowl, whisk together egg yolks and sugar until well combined.
Add lemon juice and lemon zest, and whisk to combine.
Set the bowl over a pot of simmering water (double boiler). Stir constantly until the mixture thickens and coats the back of a spoon (about 8-10 minutes).
Remove from heat and whisk in the butter until smooth and silky.
Let cool to room temperature, then refrigerate to chill for at least 1 hour.
2. Prepare the lemon mascarpone filling:
In a medium bowl, whisk the mascarpone cheese until smooth.
Add the whipped cream, powdered sugar, and vanilla extract, and mix until combined and fluffy.
Fold in the chilled lemon curd until smooth and creamy.
3. Assemble the tiramisu:
Dip each ladyfinger into the lemon juice (or lemon syrup) briefly, just enough to soak them without becoming soggy.
Arrange a layer of soaked ladyfingers in the bottom of a 9×9-inch dish or a trifle dish.
Spread half of the lemon mascarpone filling over the ladyfingers.
Repeat with another layer of soaked ladyfingers and the remaining filling.
4. Chill and serve:
Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
Just before serving, garnish with lemon zest and mint leaves for a fresh, vibrant touch.
