Ingredients:
Dough:
3 cups all-purpose flour
1 ¼ cups warm water
2 teaspoons granulated sugar
2 ¼ teaspoons instant yeast (1 packet)
2 teaspoons salt
¼ cup olive oil
Meat Filling:
2 tablespoons olive oil
1 medium onion, diced
1 pound 95% lean ground beef
3 Roma tomatoes, seeded and chopped
¼ cup chopped parsley
1 teaspoon salt
2 teaspoons 7 Spice
2 teaspoons sumac
½ teaspoon cinnamon
Directions:
Make the Dough: Combine warm water, sugar, and yeast in a bowl. Add flour and salt, mixing until well
combined. Knead on a floured surface until sticky. Incorporate olive oil and knead until the dough is soft,
smooth, and slightly sticky. Let it proof until doubled, about 90 minutes. Divide into 30 pieces, form into
balls, and let rise again until doubled.
Make the Filling: In a pan over medium heat, cook onions in olive oil until translucent. Add beef and
cook until browned. Mix in tomatoes, parsley, salt, 7 Spice, sumac, and cinnamon.
Assemble & Cook: Preheat oven to 425ºF. Roll dough into 4-5 inch circles, place filling inside, and seal
edges. Bake for 15-20 minutes until golden brown.
