Key Lime Pound Cake

Ingredients

For the Cake:

2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup (225 g) unsalted butter, at room temperature
2 1/2 cups granulated sugar
6 large eggs
1/4 cup key lime juice (regular lime juice works too)
1 tablespoon lime zest
1 cup sour cream
1 teaspoon vanilla extract
For the Glaze:

1 cup powdered sugar
2–3 tablespoons key lime juice
Lime zest for garnish (optional)

Instructions

Preheat the Oven:

Preheat your oven to 350°F (175°C).
Grease and flour a bundt or pound cake pan.
Prepare the Batter:

In a medium bowl, sift together the flour, baking soda, and salt.
In a large mixing bowl, cream the butter and sugar together until light and fluffy (about 3–5 minutes).
Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
Stir in the lime juice, lime zest, vanilla extract, and sour cream.
Gradually add the dry ingredients, mixing until just combined.
Bake the Cake:

Pour the batter into the prepared pan and smooth the top.
Bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 15 minutes, then turn it out onto a wire rack to cool completely.
Make the Glaze:

In a small bowl, whisk together the powdered sugar and lime juice until smooth.
Drizzle the glaze over the cooled cake and sprinkle with lime zest if desired.
✨ Serving Suggestions:
