Kentucky Butter Cake Cookies

Soft, buttery cookies with a rich vanilla flavor and a hint of sweetness, inspired by the classic Kentucky butter cake. These cookies are tender and melt-in-your-mouth, with a delicious buttery glaze drizzled on top.

Ingredients:

– 1 cup unsalted butter, softened

– 1 cup granulated sugar

– 2 large eggs

– 2 teaspoons vanilla extract

– 2 ¾ cups all-purpose flour

– 1 teaspoon baking powder

– ½ teaspoon baking soda

– ½ teaspoon salt

For the Glaze:

– ¼ cup unsalted butter, melted

– ½ cup granulated sugar

– 2 tablespoons water

– 1 teaspoon vanilla extract

Directions:

1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

2. In a large bowl, cream together the butter and sugar until light and fluffy, about 2-3 minutes.

3. Add eggs one at a time, beating well after each addition, then mix in the vanilla extract.

4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

6. Scoop tablespoon-sized dough balls onto the prepared baking sheets, spacing them 2 inches apart.

7. Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack.

8. While the cookies are cooling, prepare the glaze by combining the melted butter, sugar, water, and vanilla extract in a small saucepan. Heat over medium heat until the sugar is dissolved.

9. Drizzle the glaze over the warm cookies, and let them sit until the glaze sets.
