Ingredients
1 ½ cups pecan halves
30 soft caramel candies, unwrapped
2 tablespoons heavy cream
1 ½ cups semi-sweet chocolate chips (or milk chocolate, if preferred)
Sea salt, for garnish (optional)
Instructions
- Prepare the Pecans:
- Arrange clusters of 3-4 pecan halves on a parchment-lined baking sheet, spaced a few inches apart.
- Make the Caramel Layer:
- In a microwave-safe bowl, combine the unwrapped caramel candies and heavy cream.
- Microwave in 20-second intervals, stirring between intervals, until the caramel is melted and smooth.
- Let cool slightly, then spoon a small amount over each pecan cluster.
- Add the Chocolate:
- Melt the chocolate chips in a microwave-safe bowl, heating in 20-second intervals and stirring until fully melted and smooth.
- Spoon melted chocolate over each caramel-pecan cluster, smoothing the top with the back of a spoon.
- Garnish and Set:
- Sprinkle sea salt over each turtle if desired.
- Allow the turtles to set at room temperature or refrigerate for quicker setting.
- Serve and Store:
- Once the chocolate has hardened, the turtles are ready to enjoy.
- Store leftovers in an airtight container at room temperature or in the refrigerator for up to two weeks.
Notes
For variety, use dark chocolate or white chocolate instead of semi-sweet.
Toast the pecans lightly for an enhanced nutty flavor before assembling the turtles.
