High-Protein Spinach and Artichoke Chicken Casserole

A delicious and nutritious casserole packed with protein from chicken, spinach, and artichokes.

Ingredients:

– 1 lb chicken breast, cooked and shredded
– 1 can artichoke hearts, drained and chopped
– 2 cups fresh spinach
– 1 cup Greek yogurt
– 1/2 cup grated Parmesan cheese
– 1/4 cup mayonnaise
– 2 cloves garlic, minced
– 1 teaspoon onion powder
– Salt and pepper to taste
– 1/2 cup shredded mozzarella cheese

Directions:

1. Preheat oven to 375°F (190°C).
2. In a large mixing bowl, combine the shredded chicken, chopped artichoke hearts, fresh spinach, Greek yogurt, Parmesan cheese, mayonnaise, minced garlic, onion powder, salt, and pepper. Mix well.
3. Transfer the mixture to a baking dish and spread it out evenly.
4. Sprinkle the shredded mozzarella cheese on top.
5. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
6. Remove from the oven and let it cool slightly before serving.
