Healthy Ground Turkey Teriyaki Rice Bowl

Ingredients:

1 lb ground turkey

2 cups cooked brown rice (or white rice, quinoa, or cauliflower rice)

1 tbsp olive oil or sesame oil

2 cloves garlic, minced

1 small onion, chopped

1/4 cup low-sodium soy sauce

2 tbsp honey or maple syrup (for sweetness)

1 tbsp rice vinegar

1 tbsp grated fresh ginger (or 1 tsp ground ginger)

1 tsp sesame oil (optional, for added flavor)

1/2 cup shredded carrots

1/2 cup sliced green onions

Optional: sesame seeds, steamed broccoli, or other veggies (like bell peppers or snap peas)

Instructions:

Cook the rice:
Prepare your rice (or chosen grain) according to package instructions. Set aside.

Cook the turkey:
In a large pan, heat olive or sesame oil over medium heat. Add the ground turkey and cook until browned, breaking it apart as it cooks (about 6–7 mins).

Sauté the aromatics:
Add garlic and onion to the pan and cook for another 2–3 minutes, until fragrant.

Make the teriyaki sauce:
In a small bowl, whisk together soy sauce, honey, rice vinegar, and grated ginger. Pour over the turkey mixture and simmer for 2–3 minutes to let the flavors meld and the sauce slightly thicken.

Assemble the bowls:
Spoon cooked rice into bowls. Top with the turkey mixture, shredded carrots, and sliced green onions. Add optional veggies like steamed broccoli or bell peppers.

Serve:
Garnish with sesame seeds, a drizzle of extra sesame oil, or chili flakes for a little heat. Enjoy!
