Ingredients:
1 cup cottage cheese (low-fat or full-fat, your choice)
1/4 cup pickle juice (from a jar of dill pickles)
1/4 cup diced dill pickles
1 tbsp fresh dill, chopped (or 1 tsp dried dill)
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp black pepper
Salt to taste (pickle juice is salty, so taste first)
Optional: squeeze of lemon juice or a splash of vinegar for extra tang
Instructions:
Blend the base:
In a blender or food processor, blend the cottage cheese and pickle juice until completely smooth and creamy.
Add flavor:
Pulse in the diced pickles, dill, garlic powder, onion powder, and pepper. Blend just enough to mix but still keep some pickle texture.
Taste & adjust:
Taste and adjust salt or acidity as needed.
Chill:
Chill for at least 30 minutes for flavors to meld.
