Ingredients:
1 1/2 cups rolled oats
1/2 cup almond flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup almond butter (or peanut butter)
1/4 cup honey or maple syrup
1 large egg
1 teaspoon vanilla extract
1/3 cup dark chocolate chips or raisins (optional)
1/4 cup chopped nuts (optional)
Directions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine the oats, almond flour, baking soda, cinnamon, and salt.
In a separate bowl, mix together the almond butter, honey (or maple syrup), egg, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir until everything is well combined. Fold in chocolate chips or raisins and chopped nuts if desired.
Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon.
Bake for 8-10 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
