  • 6 cups chicken broth

  • 2 cups potatoes, diced
  • 1 cup frozen green peas
  • 1 tablespoon fresh parsley, chopped

Instructions

  • Sauté the Vegetables: Heat olive oil in a large pot over medium heat. Add diced onions, carrots, and celery. Cook for 5 minutes until vegetables soften.
  • Add Ground Turkey and Garlic: Add ground turkey, minced garlic, Italian seasoning, salt, and pepper to the pot. Break up the turkey with a spoon as it cooks. Sauté for about 7 minutes, or until the turkey is browned.
  • Incorporate Tomato Paste and Broth: Stir in tomato paste and cook for 2 minutes. Pour in chicken broth and crushed tomatoes, mixing everything well.
  • Add Potatoes and Simmer: Add diced potatoes to the pot. Bring to a boil, then reduce to a simmer. Cook for 15-20 minutes, or until potatoes are tender.
  • Finish with Peas and Parsley: Add frozen peas and cook for 1 additional minute. Garnish with fresh parsley before serving.
