Green Tea Lemon & Ginger Chews

Refreshing and tangy homemade chews made with green tea, ginger, and lemon, perfect for a soothing and healthy snack.

Ingredients:

– 3/4 cup (180 ml) cold water

– 5 tablespoons unflavored gelatin powder

– 1/2 cup strongly brewed green tea (use 4 tea bags)

– 1/3 cup (80 ml) ginger juice

– 1/4 cup (60 ml) fresh lemon juice or preservative-free bottled lemon juice

– Optional: honey, to taste

Directions:

1. Pour the cold water into a medium saucepan and sprinkle the gelatin powder evenly over the surface. Let it sit for 5 minutes to bloom while preparing the other ingredients.

2. Brew the green tea with 4 tea bags, steeping according to package instructions. Remove the tea bags to ensure you have 1/2 cup of strongly brewed tea.

3. Add the brewed tea, ginger juice, and lemon juice to the saucepan with the bloomed gelatin. Heat the mixture over low heat, stirring constantly, until the gelatin is fully dissolved and smooth. Do not allow the mixture to boil.

4. Taste the mixture and add honey if desired for sweetness, stirring well to combine.

5. Pour the mixture carefully into silicone molds or a lightly greased baking dish.

6. Refrigerate for at least 2 hours, or until the chews are firm.

7. Remove from molds or cut into bite-sized squares if using a baking dish. Store in an airtight container in the refrigerator for up to 1 week.
