Greek Lemon Chicken and Potatoes recipe—tender chicken and crispy potatoes in a zesty, flavorful lemon-garlic sauce! 🍗🍋🥔

Ingredients:

4 bone-in, skin-on chicken thighs or breasts

4 medium potatoes, cut into wedges

1/4 cup olive oil

2 tbsp lemon juice (freshly squeezed)

1 tbsp lemon zest

4 cloves garlic, minced

1 tbsp dried oregano

1 tsp dried thyme

1/2 tsp salt

1/4 tsp black pepper

1/2 cup chicken broth

Fresh parsley, chopped (for garnish)

Instructions:

Preheat oven to 400°F (200°C).

Prepare the chicken and potatoes:

Arrange the chicken thighs (or breasts) and potato wedges on a large baking sheet.

Make the marinade:

In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.

Marinate:

Pour half of the marinade over the chicken and potatoes, tossing them to coat. Let it marinate for about 15-20 minutes (optional, but adds extra flavor).
