Ginger Turmeric Vanilla Cashew Cookies

These golden, spicy cookies are packed with ginger and turmeric, topped with a creamy vanilla cashew frosting for a healthy, flavorful treat.

Ingredients:

2 ripe bananas 🍌

1 1/2 cups oats, finely ground into flour

1 tablespoon ground ginger 🧂

1 teaspoon turmeric powder

1 teaspoon vanilla extract

1/2 cup cashews, soaked (for frosting) 🌰

2 tablespoons maple syrup 🍁

1/4 cup water (for frosting)

Directions:

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a bowl, mash the bananas and mix in the ground oats, ginger, turmeric, and vanilla until smooth.

Scoop spoonfuls of the dough onto the baking sheet and flatten slightly.

Bake for 12-15 minutes until golden brown.

While cookies bake, blend soaked cashews, maple syrup, and water until smooth to make the frosting.

Once the cookies have cooled, spread cashew frosting on top and enjoy!
